Hello there! We are Eric and Karen Tippit. We began making cheese as Caprino Royale at our small farm in Waco, TX in 2010 after leaving the corporate world, returning to family land, and developing our beloved herd of Nubian goats. Our goal was to introduce to our customers the international styles of cheeses either not readily available by local producers or imported to the U. S. market from abroad. As we grew so did the demand for our cheese. In order to expand our selections we began to collaborate with local dairies that focus on quality of milk. We began by producing an additional line of mixed milk cheeses with milk from our goats and their cows, similar to those you would find in Spain which were well received. Sadly, over time, the demands and economy of farming coupled with the added demands of dairy production and cheesemaking compounded with the lack of available help weighed heavily the two of us, leading us to a tough and heart wrenching crossroads. This led to a "revelation". We decided we must sell the farm and work smarter, not harder, by collaborating with other dairies. So, we moved closer to the milk producers and built a new creamery and soon to open retail shop under the name Revelation Artisan Cheese. We began production of our all cow's milk cheeses in April 2017 and we invite you to visit us here at the "Top of the Hill Country" in Meridian, TX.
